If you have a big sweet tooth like I do, you will love this recipe. The combination of strawberries and white chocolate chips is just amazing! Since Valentines is coming up, it's a perfect chance to make these!
The original recipe can be found here, however my modified version is below. I will explain the changes I made from the original recipe below.
Ingredients:
1 & 1/4 cups whole wheat flour
1/2 tsp baking soda
1/2 tsp ground cinnamon
1/4 cup sugar
1/4 cup light brown sugar
1/2 cup + 2 tbsp cinnamon applesauce
1 egg white, beaten
2/3 cup diced strawberries
1/4 cup white chocolate chips
Directions:
1. Preheat the oven to 350 degrees.
2. In a bowl mix the flour, baking soda and ground cinnamon together.
3. In a different bowl, mix brown sugar, granulated sugar and applesauce until no brown sugar lumps remain with a fork.
4. Add the beaten egg whites until mixed in.
5. Add the wet ingredients to the dry and mix until *just* combined and fold in the strawberries and chocolate chips.
6. Spray muffin tin and divide the mix into the tin.
7. Bake for 15-20 minutes.
Differences with original recipe:
1. I used whole wheat flour instead of all purpose white flour.
2. I used cinnamon applesauce instead of unsweetened.
3. I used white chocolate chips instead of mini chocolate chips.
4. I made mini muffins instead of regular sized muffins.
5. I used egg white beaters instead of egg whites from a whole egg.
